The first recipe here was sent to me by Ursula Zanetti, from Switzerland, with a note that it is a recipe for a Swiss dinner. The name of the first dish is Roeschti, which is a potato cake. The name of the second dish is "Geschnetzeltes", made with veal or chicken and cream. Try them; they're delicious! Thank you, Ursula; I've tried not to change your instructions any more than I had to. More recipes are on their way!
