Island Ceviche
| 12 oz. boneless fillet of white fish (diced 1/2 in. square) | 1 C. lime juice | |
| 1/2 Hawaiian papaya (peeled, seeded and diced) | 1/2 C. orange juice | |
| 3 Tbsp. chopped cilantro | 2 jalapeno peppers, chopped small | |
| 1/2 cup chopped green onions | 2 Tbsp.olive oil | |
| 1/2 large avocado | ||
| Marinate diced fish in lime juice for 45 minutes to 1 hour (the lime juice "cooks" the fish, which will turn whitish and opaque). Drain off the excess lime juice. Add orange juice, olive oil, cilantro, peppers (to taste), green onions and salt to taste. Mix well and chill well. Just before serving, add papaya and avocado. Mix gently. | ||
