Oven-Fried Coconut Chicken

1-1/2 cups flaked coconut, loosely packed

1/4 cup unsalted butter, melted

 

1 cup seasoned breadcrumbs

2 eggs, beaten until foamy

3 lbs. chicken pieces

Preheat oven to 350°F. Combine coconut and breadcrumbs in a shallow dish. Season with salt and pepper to taste. Pour melted butter into a baking pan. Dip chicken in egg, one piece at a time, then roll in coconut mixture. Arrange chicken, skin side down, in pan. Bake 25 minutes. Turn chicken, and bake another 25 minutes, until cooked through and golden.
