| 1 C. crab meat |

1 cup milk |
| 2 eggs |

1 Tbsp. butter, melted |
| 2 C. flour | 1/2 tsp. salt | |
| 1 Tbsp. baking powder | 4 Tbsp. butter or shortening | |
| Carefully remove any shell bits from crab meat and break into small pieces. Sift together flour, baking powder and salt. Break eggs into small bowl and beat until foamy; add to flour mixture and mix well. Gradually add milk and blend until very smooth; add melted butter and blend well. Add crab meat to mixture; mix well (batter should be thin). Melt butter or shortening in shallow frying pan and heat until hot but not smoking (375°). Drop batter into hot oil and fry for 3 minutes, or until golden. Drain on paper towels and serve with your favorite seafood sauce. Serves about 6. | ||
