Crab Meat Fritters

1 C. crab meat

 

1 cup milk
2 eggs

 

1 Tbsp. butter, melted
2 C. flour   1/2 tsp. salt
1 Tbsp. baking powder   4 Tbsp. butter or shortening
Carefully remove any shell bits from crab meat and break into small pieces. Sift together flour, baking powder and salt. Break eggs into small bowl and beat until foamy; add to flour mixture and mix well. Gradually add milk and blend until very smooth; add melted butter and blend well. Add crab meat to mixture; mix well (batter should be thin). Melt butter or shortening in shallow frying pan and heat until hot but not smoking (375°). Drop batter into hot oil and fry for 3 minutes, or until golden. Drain on paper towels and serve with your favorite seafood sauce. Serves about 6.
