Auntie's Oven Kalua Pork

5 to 6-pound pork butt |
|
1 tablespoon liquid smoke |
|
2 1/2 TBS. Hawaiian (or Kosher) salt |
*Ti leaves |

| Preheat oven to 325 degrees F. Rub pork butt all over with liquid smoke and 1 1/2 tablespoons of the salt. Wrap pork in ti leaves then in foil and seal completely. Place in roasting pan and bake for 5 hours. Remove foil carefully so the steam doesn't burn you; discard ti leaves, shred pork, sprinkle with remaining salt and serve mounded on a platter that you have covered with a thin layer of ti leaves or fresh spinach. Serves 10. *Ti leaves might be available from a local florist, but if you can't find them they can be replaced with banana leaves or fresh spinach leaves. In a pinch, you can ignore the leaves and just wrap the pork in the foil. Still tastes ono! |
