Marinated Fruit

1 20-oz. can pineapple chunks

 

1 fresh pear

1 papaya

 

1 tart apple

1 nectarine

 

1 Tbsp. honey

2 Tbsp. orange juice concentrate, thawed

 

1 tsp. dried mint flakes, crushed

Drain pineapple, reserving fruit. Remove cores from unpeeled apple and pear; pit nectarine; peel and pit papaya. Cut fruit into bite-sized chunks and mix together in a shallow dish. Mix reserved juice with remaining ingredients and pour over fruits. Stir to mix. Cover and put in refrigerator to chill for 2 to 3 hours, stirring occasionally. Serve with marinade.
