Maui Onion Soup

2 medium Maui onions, sliced thinly 3 cloves garlic, minced finely
1/2 teaspoon sesame oil 1 can (14 1/2 oz) vegetable broth
3 cups boiling water 1/4 teaspoon sea salt (optional)

1 tablespoon soy sauce or tamari

In a medium saucepan, saute onions and garlic in sesame oil until onions are transparent. Add the broth and boiling water. Cover and simmer for 5 minutes. Add the salt; cover and simmer for 30 more minutes. Just before serving, add soy sauce. Serve immediately. Makes 6 servings.
