| 2 medium Maui onions, sliced thinly | 3 cloves garlic, minced finely | |
| 1/2 teaspoon sesame oil | 1 can (14 1/2 oz) vegetable broth | |
| 3 cups boiling water | 1/4 teaspoon sea salt (optional) | |

1 tablespoon soy sauce or tamari |

| In a medium saucepan, saute onions and garlic in sesame oil until onions are transparent. Add the broth and boiling water. Cover and simmer for 5 minutes. Add the salt; cover and simmer for 30 more minutes. Just before serving, add soy sauce. Serve immediately. Makes 6 servings. | ||
