Shoyu Chicken

1 cup low sodium Shoyu
1½ cups water
6 cloves garlic cut up
1 tsp granulated sugar
4 tbsp brown sugar (liquid would work good)
2 tbsp vinegar
1 pc ginger, about 2 x 2" cut up
2 tbsp worcestershire
1 medium onion cut up
1 tsp ground ginger
1 tsp dry mustard
1 tsp celery seeds
  Combine all ingredients and bring to boil with about 3 pounds of boneless skinless chicken, thighs & drumsticks (I sometimes use close to 5 pounds). When it starts boiling, lower heat & simmer for 70 minutes, remove lid for last 15 minutes. Remove chicken, and render liquid to about 1½ cup. Then cool & when cool skim off fat. When serving reheat the sauce that is left & pour over chicken. Enjoy!
