2 C. mochiko (rice flour) |

1/2 C. sugar |

1 tsp. baking powder |

Pinch of salt |

3/4 to 1 C. water |
2 C. grated coconut |

Granulated Sugar |
Sesame seed |
|
In a bowl, combine mochiko, the 1/2 cup sugar, baking powder, and salt. Slowly add enough water to make a stiff dough. Bring a pot of water to a boil. Shape dough into 1 1/2-inch balls; flatten each ball into a patty 1/4 to 1/2 inch thick. Drop several pieces at a time into boiling water; boil until patties float to top. Remove and place in colander. Run under cold water to cool; drain. While still damp, roll in coconut until well coated. Repeat until all are cooked. Before serving, sprinkle with a little sugar and sesame seed. Serves 8. |
